2 cups plain Greek yogurt

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1/4 cup honey or maple syrup

1 teaspoon ground cinnamon

1/2 teaspoon vanilla extract

1/4 cup granola (optional, for topping)

2 tablespoons chopped walnuts or pecans (optional, for topping)

A pinch of salt

Prepare the Apple Mixture: In a medium saucepan over medium heat, add the diced apples, honey or maple syrup, ground cinnamon, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the apples are soft and have released some juices. Remove from heat and allow to cool slightly.
