Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 cup dried cranberries or raisins (chopped if large)

1/4 cup chopped nuts (walnuts, pecans, or almonds)

Pinch of salt

2 tablespoons chia seeds (optional for added nutrition)

Instructions

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, nutmeg (if using), chopped nuts, dried cranberries, and a pinch of salt. Stir well to mix all the dry ingredients evenly.

Mix Wet Ingredients: In a separate bowl, mix the almond butter, applesauce, honey (or maple syrup), and vanilla extract until smooth and well combined.

Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Add the chia seeds if you’re using them. Stir until everything is well combined and a sticky dough forms. You may need to use your hands to incorporate all the ingredients.

Chill the Mixture: Once combined, cover the bowl with plastic wrap or a clean kitchen towel and refrigerate for about 30 minutes. This helps the mixture firm up, making it easier to roll into bites.

Roll the Bites: After chilling, take small amounts of the mixture and roll them into bite-sized balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet or plate.

Store Them: Once rolled, you can eat them right away or store them in an airtight container in the fridge. They stay fresh for 1 week or can be frozen for longer storage.
