Cilantro Lime Chicken Tacos

1 lb boneless, skinless chicken thighs

1/4 cup fresh lime juice (about 2 limes)

1/4 cup fresh cilantro, chopped

2 cloves garlic, minced

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

8 small corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, shredded

1/2 cup diced tomatoes

1/4 cup crumbled queso fresco (optional)

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine lime juice, chopped cilantro, minced garlic, cumin, chili powder, smoked paprika, olive oil, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Chicken: Heat a skillet or grill pan over medium-high heat. Remove the chicken from the marinade and add to the pan. Cook for about 6-7 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove from heat and let rest for a few minutes.

      Shred the Chicken: Using two forks, shred the chicken into bite-sized pieces.

        Warm the Tortillas: In the same skillet, warm the tortillas for about 30 seconds on each side until pliable. You can also wrap them in aluminum foil and place in a preheated oven at 350°F (175°C) for about 10 minutes.

          Assemble the Tacos: On each tortilla, layer shredded chicken, avocado slices, shredded red cabbage, and diced tomatoes. Top with crumbled queso fresco if desired.

            Serve: Squeeze fresh lime juice over the tacos, garnish with extra cilantro if preferred, and serve with lime wedges on the side.
