1 lb boneless, skinless chicken thighs

1/4 cup fresh lime juice (about 2 limes)

1/4 cup fresh cilantro, chopped

3 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp salt

1/4 tsp black pepper

2 tbsp olive oil

For the Rice:

1 cup long-grain white rice

2 cups chicken broth or water

Juice of 1 lime

1/4 cup fresh cilantro, chopped

Salt to taste

For the Bowl Toppings:

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup shredded lettuce

1/2 cup shredded cheese (cheddar or Mexican blend)

Sour cream or Greek yogurt, for serving

Extra lime wedges and cilantro for garnish

Marinate the Chicken: In a mixing bowl, whisk together the lime juice, chopped cilantro, minced garlic, cumin, chili powder, salt, pepper, and olive oil. Add the chicken thighs, ensuring they are well coated. Cover and marinate for at least 30 minutes in the refrigerator (up to 2 hours for maximum flavor).

    Cook the Rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes until the rice is tender and the liquid is absorbed. Once cooked, remove from heat and let it sit for 5 minutes, then fluff with a fork. Stir in the lime juice, chopped cilantro, and salt to taste.

      Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and add to the pan (discard any leftover marinade). Cook for about 5-7 minutes per side or until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F/74°C). Once done, remove from the heat and let it rest for 5 minutes before slicing.
