Ingredients

For Brownies:

1 cup unsalted butter (2 sticks)

2 cups granulated sugar

4 large eggs

1 tablespoon pure vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

½ teaspoon salt

½ teaspoon baking powder

For Cookie Dough Filling:

½ cup unsalted butter (1 stick), softened

¾ cup brown sugar, packed

¼ cup granulated sugar

2 tablespoons milk

1 teaspoon vanilla extract

1 cup all-purpose flour

½ cup miniature chocolate chips

For Coating:

1 cup semi-sweet chocolate chips

1 tablespoon vegetable oil

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.

Make the Brownie Batter: In a large mixing bowl, melt the 1 cup of butter. Stir in the granulated sugar until well combined, then add the eggs one at a time, mixing thoroughly after each addition. Add the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients to the wet ingredients until just combined (don't overmix).

Bake the Brownies: Pour the brownie batter into the prepared baking pan. Use a spatula to spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let it cool completely in the pan on a wire rack.

Prepare Cookie Dough Filling: While the brownies are cooling, make the cookie dough filling. In a bowl, cream together the softened ½ cup of butter, brown sugar, and granulated sugar until light and fluffy. Stir in the milk and vanilla extract.

Incorporate Flour and Chips: Gradually add the 1 cup of flour, mixing just until combined. Fold in the miniature chocolate chips.

Form Cookie Dough Balls: Using a cookie scoop or your hands, form the cookie dough mixture into small balls (about 1 inch in diameter). Place them on a baking sheet and freeze for about 30 minutes until firm.

Fill the Brownies: Once the brownies are completely cooled, cut them into squares. Take a brownie square, make a small indentation in the center, and place a cookie dough ball in the center. Top it off with another brownie square, pressing it down gently. Repeat for all brownie squares.

Melt the Chocolate Coating: In a microwave-safe bowl, combine the chocolate chips and vegetable oil. Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and fully melted.

Coat the Brownie Bombs: Dip each brownie-filled cookie dough bomb into the melted chocolate, making sure they are fully coated. Use a fork to lift them out and let the excess chocolate drip off. Place them on a parchment-lined baking sheet.

Set and Serve: Once all the brownie bombs are coated, refrigerate them for at least 30 minutes to set. Once solidified, serve and enjoy!
