Ingredients

1 cup all-purpose flour

1/2 cup shredded unsweetened coconut

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

1/2 cup white chocolate chips (optional)

1/4 cup chopped nuts (optional, like pecans or walnuts)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper for easy removal.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, shredded coconut, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to cream the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.

Mix in Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined. Avoid overmixing.

Fold in Chocolate and Nuts: Gently fold in the semi-sweet chocolate chips, white chocolate chips (if using), and chopped nuts (if using) until evenly distributed throughout the batter.

Spread in Baking Pan: Pour the batter into the prepared baking pan, using a spatula to smooth out the top evenly.

Bake: Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Cool and Cut: Allow the bars to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Once cooled, cut into squares or bars.

Serve and Enjoy: Serve these delightful chocolate chip coconut bars as a sweet treat or dessert, and enjoy with a cup of tea or coffee!
