Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semi-sweet chocolate chips

1 cup pecans, chopped

1 cup soft caramels, unwrapped

1/4 cup heavy cream

Sea salt, for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Make the Cookie Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, sift together the flour, cocoa powder, baking soda, and salt. Gradually add the dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix! Fold in the chocolate chips and chopped pecans.

Form the Cookies: Using a medium cookie scoop, drop balls of dough onto the prepared baking sheets about 2 inches apart.

Prepare Caramel Filling: In a small saucepan over low heat, combine the unwrapped caramels and heavy cream. Stir until smooth and completely melted.

Add Caramel to Cookies: Create a small indent in the center of each cookie dough ball using your thumb or the back of a spoon. Spoon a small amount of the melted caramel into each indent, ensuring you don’t overfill as the caramel will spread while baking.

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges look set but the centers are still soft (they will continue to firm up as they cool).

Cool and Garnish: Once out of the oven, sprinkle a tiny pinch of sea salt on top of each cookie for an extra flavor boost. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These cookies are best enjoyed fresh, but they can be stored in an airtight container for up to a week. Indulge in the perfect combination of chocolate, caramel, and nutty pecans!
