1 pound (450g) boneless, skinless chicken breasts, sliced into thin strips

3 cups broccoli florets

1 medium onion, sliced

3 cloves garlic, minced

1-inch piece ginger, minced

3 tablespoons soy sauce (low-sodium preferred)

2 tablespoons oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 teaspoon rice vinegar

1 tablespoon honey or brown sugar

Salt and pepper to taste

Sesame seeds for garnish

Cooked rice or noodles (for serving)

Instructions
 

Prepare the Marinade: In a mixing bowl, combine sliced chicken, soy sauce, oyster sauce, rice vinegar, honey or brown sugar, and cornstarch. Toss to coat the chicken evenly. Let it marinate for 15-20 minutes while you prepare the other ingredients.

    Blanch the Broccoli: In a pot of boiling water, blanch the broccoli florets for 2-3 minutes until bright green and slightly tender. Drain and quickly transfer to an ice bath to stop the cooking process. Set aside.

      Heat the Wok: In a large wok or skillet, heat vegetable oil over medium-high heat until shimmering. Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant.

        Cook the Chicken: Add the marinated chicken to the wok in a single layer. Let it sear for about 2-3 minutes without stirring, then begin to stir-fry until fully cooked, about 4-5 minutes. Ensure the chicken is golden brown and no longer pink in the center.

          Add Vegetables: Add the sliced onion to the wok and stir-fry for another 2 minutes until slightly softened. Then, add the blanched broccoli and toss everything together, allowing the flavors to meld for an additional 2 minutes.
