2 cups fresh peaches, peeled and diced

1/2 cup granulated sugar

1 tablespoon fresh lemon juice

1 cup crushed graham crackers

1/2 cup unsalted butter, melted

1 cup cream cheese, softened

1/2 cup powdered sugar

1 cup whipped cream (store-bought or homemade)

1 teaspoon vanilla extract

Pinch of salt

Fresh mint leaves for garnish (optional)

Prepare the Peach Mixture: In a medium bowl, combine the diced peaches, granulated sugar, and lemon juice. Toss gently and let it sit for about 10 minutes to macerate and release its juices.

    Make the Crust: In a separate bowl, mix the crushed graham crackers and melted butter until fully combined. Press this mixture firmly into the bottom of a lined 8x8 inch baking dish to form an even crust. Place it in the refrigerator to chill for 15 minutes.

      Create the Cream Filling: In a large mixing bowl, beat the softened cream cheese with the powdered sugar, vanilla extract, and a pinch of salt until smooth and creamy. Gently fold in the whipped cream until well incorporated.
