2 ripe avocados, halved and pitted

1 large cucumber, peeled and chopped

1 cup Greek yogurt

2 cups vegetable broth, chilled

1 tablespoon fresh lime juice

1 small garlic clove, minced

1/4 cup fresh cilantro leaves

Salt and pepper to taste

Olive oil, for drizzling

Optional: diced radishes and additional cilantro for garnish

Prepare the Ingredients: In a blender, combine the avocado, chopped cucumber, Greek yogurt, chilled vegetable broth, lime juice, minced garlic, and cilantro leaves.

    Blend Until Smooth: Blend the mixture on high speed until it reaches a silky-smooth consistency. You may need to scrape down the sides of the blender midway to ensure everything is well combined.

      Season to Taste: Taste the soup and add salt and pepper as desired. Blend again to incorporate the seasoning.

        Chill the Soup: Transfer the blended soup to a bowl or container, cover, and refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill.
