1 lbs chicken tenders

1 ripe mango, peeled and diced

1 tablespoon olive oil

2 tablespoons sweet chili sauce

1 tablespoon soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prep the Marinade: In a large bowl, combine diced mango, olive oil, sweet chili sauce, soy sauce, honey, minced garlic, grated ginger, cayenne pepper, salt, and pepper. Mix well and set aside a few tablespoons for later.

    Marinate the Chicken: Add the chicken tenders to the bowl with the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Prepare the Breading Station: Set up three shallow bowls: one with all-purpose flour, the second with beaten eggs, and the third with panko breadcrumbs.

        Bread the Chicken: Remove each chicken tender from the marinade, allowing excess to drip off. Dredge the chicken first in the flour, shaking off the excess, then dip in the egg, and lastly coat with panko breadcrumbs. Press gently to ensure the breadcrumbs stick.

          Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

            Bake the Chicken: Arrange the breaded chicken tenders on the prepared baking sheet. Bake for 15-20 minutes or until golden brown and cooked through, flipping halfway through for even crispness.

              Finish with Sauce: In the final minutes of baking, drizzle the reserved mango marinade over the chicken tenders for an extra layer of flavor.
