Chili Chicken Burrito Bowls for Lunch

2 cups cooked brown rice

1 lb boneless, skinless chicken thighs

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

½ teaspoon cayenne pepper (adjust for spice preference)

2 tablespoons olive oil

Salt and pepper to taste

1 cup diced tomatoes (or salsa)

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional toppings: sour cream, shredded cheese, jalapeños, or hot sauce

Instructions
 

Prepare the Chicken: In a large bowl, combine olive oil, minced garlic, cumin, smoked paprika, chili powder, cayenne pepper, salt, and pepper. Add the chicken thighs and coat evenly with the marinade. Let marinate for at least 30 minutes, or overnight in the fridge for more flavor.

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for 5-6 minutes on each side, or until fully cooked through and no longer pink in the middle. Remove from heat and let rest for a few minutes before slicing into bite-sized pieces.

      Sauté Vegetables: In the same skillet, add the diced red onion and bell pepper. Sauté for 4-5 minutes until the onion is translucent. Add the corn and black beans, stirring to combine, and cook for an additional 2-3 minutes or until heated through.

        Assemble the Bowls: In serving bowls, add a generous scoop of cooked brown rice as the base. Top with the sautéed vegetable mixture, sliced chili chicken, and diced tomatoes (or salsa).

          Add Toppings: Garnish the bowls with avocado slices, chopped cilantro, and any additional toppings you prefer such as sour cream, shredded cheese, jalapeños, or hot sauce.
