Chicken Teriyaki Lettuce Cups

1 lb (450g) ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

½ cup low-sodium soy sauce

¼ cup honey

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon of water (for thickening)

1 red bell pepper, diced

2 green onions, sliced (plus additional for garnish)

1 cup shredded carrots

1 tablespoon sesame seeds

1 head of butter or iceberg lettuce, leaves separated

Instructions
 

Prepare the Sauce: In a small bowl, mix together the soy sauce, honey, rice vinegar, and sesame oil. Set aside.

    Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

      Brown the Chicken: Add the ground chicken to the skillet. Cook for about 5-7 minutes, breaking it apart with a spatula, until it’s browned and cooked through.

        Add Vegetables: Stir in the diced red bell pepper and shredded carrots. Cook for an additional 3-4 minutes until the peppers are tender.

          Combine with Sauce: Pour the prepared sauce over the chicken mixture. Allow it to simmer for 2-3 minutes.

            Thicken the Sauce: Stir in the cornstarch mixed with water and cook for another minute until the sauce thickens.

              Assemble Lettuce Cups: Spoon a generous amount of the chicken teriyaki mixture onto the center of each lettuce leaf.

                Garnish and Serve: Top the cups with sliced green onions and a sprinkle of sesame seeds. Serve immediately while warm and enjoy!
