Chicken Skewers with Lime Salsa

For the Chicken Skewers:

1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes

3 tablespoons olive oil

2 tablespoons soy sauce

2 tablespoons honey

2 cloves garlic, minced

1 tablespoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

8 wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Lime Salsa:

1 cup cherry tomatoes, quartered

1/2 red onion, finely chopped

1 jalapeño, seeded and diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Zest of 1 lime

Salt to taste

Marinate the Chicken: In a large bowl, combine olive oil, soy sauce, honey, minced garlic, ground cumin, smoked paprika, salt, and pepper. Add the cubed chicken and toss until it's well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Lime Salsa: In a medium bowl, mix together the quartered cherry tomatoes, finely chopped red onion, diced jalapeño, and chopped cilantro. Squeeze the juice of the limes over the mixture, add lime zest, and season lightly with salt. Stir well and set aside to let the flavors meld.

      Preheat the Grill: Heat your grill (or grill pan) to medium-high heat.

        Skewer the Chicken: Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.

          Grill the Skewers: Place the chicken skewers on the heated grill. Grill for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. Ensure the internal temperature reaches 165°F (75°C).

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Serve hot with the lime salsa on the side, garnishing with extra cilantro if desired.
