For the Chicken Filling:

1 lb ground chicken

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or yellow), finely diced

1 carrot, grated

1 cup mushrooms, finely chopped

2 tbsp soy sauce

1 tsp sesame oil

1/2 tsp salt

1/4 tsp black pepper

1/4 cup fresh cilantro, chopped

For the Blueberry Glaze:

1 cup fresh blueberries (or frozen, thawed)

2 tbsp honey or maple syrup

1 tbsp apple cider vinegar

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Pinch of salt

For Assembly:

1 head of Bibb or Romaine lettuce, leaves separated

Chopped green onions, for garnish

Additional cilantro, for garnish

Instructions
 

Prepare the Blueberry Glaze:

    - In a small saucepan over medium heat, combine the blueberries, honey (or maple syrup), and apple cider vinegar. Cook for about 5 minutes, stirring occasionally until the blueberries start to burst and release their juices.

      - Add the cornstarch slurry and a pinch of salt, stirring continuously until the glaze thickens, about 2-3 minutes. Remove from heat and set aside.

        Cook the Chicken Filling:

          - Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

            - Add the ground chicken to the skillet, breaking it up with a spoon. Cook until browned and cooked through, approximately 5-7 minutes.

              - Stir in the bell pepper, grated carrot, and mushrooms. Cook for an additional 3-4 minutes.

                - Add the soy sauce, sesame oil, salt, and pepper. Mix well and cook for another 2 minutes.

                  - Stir in the chopped cilantro just before removing from heat.

                    Assemble the Wraps:

                      - Take one lettuce leaf and spoon a generous amount of the chicken filling into the center of each leaf.

                        - Drizzle some of the blueberry glaze over the chicken filling for added flavor.

                          - Garnish with chopped green onions and additional cilantro if desired.

                            Serve:
