Ingredients

2 cups rotini pasta

1 lb (450g) cooked chicken breast, diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1 cup romaine lettuce, chopped

1/2 cup Caesar dressing (homemade or store-bought)

1/4 cup grated Parmesan cheese

1/4 cup croutons (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley (for garnish, optional)

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

Prepare the Chicken: In a large mixing bowl, combine the diced cooked chicken with olive oil, garlic powder, salt, and pepper. Toss well to ensure the chicken is evenly coated.

Combine Ingredients: In the same mixing bowl, add the cooled pasta, cherry tomatoes, red onion, chopped romaine lettuce, and Caesar dressing. Toss everything gently until well-combined.

Add Parmesan Cheese: Sprinkle the grated Parmesan cheese over the pasta salad and fold it in carefully to incorporate.

Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.

Serve: Just before serving, give the salad a gentle toss, adjust seasoning if necessary, and top with croutons for a crunchy finish. Garnish with fresh parsley if desired.
