2 boneless, skinless chicken breasts

6 strips of bacon

2 ripe avocados, diced

4 cups mixed salad greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

½ cucumber, thinly sliced

¼ red onion, thinly sliced

¼ cup feta cheese, crumbled

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

Salt and pepper to taste

Fresh parsley for garnish

Cook the Bacon: In a skillet over medium heat, cook the bacon strips until crispy. Once done, transfer them to a paper towel-lined plate to drain excess fat. Reserve a tablespoon of the bacon grease in the skillet for cooking the chicken.

    Cook the Chicken: In the same skillet, season the chicken breasts with salt and pepper. Cook over medium-high heat for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from the skillet, let rest for a few minutes, then dice into bite-sized pieces.
