Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 cups chicken broth

1 cup carrots, sliced

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1¾ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup milk

4 tablespoons unsalted butter, melted

Instructions

Prepare the Chicken: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional minute until fragrant.

Cook the Chicken: Add the chicken pieces to the skillet. Season with salt, pepper, dried thyme, and rosemary. Cook until the chicken is browned on all sides and cooked through, approximately 8-10 minutes.

Add Vegetables: Pour in the chicken broth and add sliced carrots and frozen peas. Bring to a simmer and let cook for 5 minutes, allowing the flavors to meld.

Make the Dumpling Batter: In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt. In a separate bowl, combine milk and melted butter. Gradually stir the wet ingredients into the dry until just combined; don’t overmix.

Add Dumplings: Drop spoonfuls of the dumpling batter onto the chicken mixture in the skillet. Cover the skillet with a lid and let steam over low heat for about 15-20 minutes, or until the dumplings have doubled in size.

Final Touches: Remove the lid and check that the dumplings are fluffy and cooked through. Adjust seasoning with additional salt and pepper if needed.

Serve: Ladle the chicken and dumplings onto plates or serve directly from the skillet. Enjoy the comforting flavors!
