2 cups rolled oats

1 cup almond butter (or peanut butter)

1/2 cup honey (or maple syrup for vegan option)

1/2 cup mini chocolate chips

1/2 cup dried fruit (e.g., cranberries or raisins)

1/4 cup chopped nuts (e.g., almonds or walnuts)

1 teaspoon vanilla extract

1/4 teaspoon salt

Instructions
 

Prepare the Pan: Line an 8x8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Lightly grease the parchment paper with non-stick cooking spray or a little oil.

    Mix Wet Ingredients: In a medium saucepan over low heat, combine the almond butter and honey. Stir constantly until the mixture is smooth and well combined. Remove from heat, then stir in the vanilla extract and salt.

      Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, mini chocolate chips, dried fruit, and chopped nuts. Stir until evenly mixed.

        Combine Wet and Dry: Pour the warm almond butter mixture over the dry ingredients. Use a spatula or wooden spoon to thoroughly mix them together until all the oats and other ingredients are evenly coated.

          Press into Pan: Transfer the mixture into the prepared baking pan. Using the back of the spatula or your hands (dampened to prevent sticking), firmly press the mixture down into an even layer, making sure it’s compact.

            Chill: Cover the pan with plastic wrap or a lid, then place it in the refrigerator for at least 2 hours, allowing the squares to firm up.

              Slice and Serve: Once set, lift the granola square from the pan using the parchment paper overhang. Place it on a cutting board and cut into squares or bars. Store any leftovers in an airtight container at room temperature or in the fridge for up to a week.
