Cherry Pie Bars with Almond Glaze

2 cups fresh or frozen cherries, pitted and chopped

1/2 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

For the Crust and Topping:

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup sliced almonds (optional)

For the Almond Glaze:

1 cup powdered sugar

2 tablespoons milk (or water)

1/2 teaspoon almond extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, allowing some overhang for easy removal later.

    Make the Cherry Filling: In a medium saucepan, combine the cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and almond extract. Cook over medium heat until the mixture starts to bubble and thicken, approximately 5-7 minutes. Once thickened, remove from heat and set aside.

      Prepare the Crust and Topping: In a large mixing bowl, whisk together the flour, rolled oats, brown sugar, baking soda, and salt. Pour in the melted butter and mix until the mixture is crumbly and well combined. Press about 2/3 of this mixture firmly into the bottom of the prepared baking pan to form the crust. Set the remaining crumb mixture aside for topping.

        Layer the Cherry Filling: Spread the cherry filling evenly over the prepared crust, ensuring it covers the surface.

          Add Crumb Topping: Sprinkle the remaining crumb mixture over the cherry filling evenly. If desired, sprinkle sliced almonds on top for added crunch and flavor.
