Cherry Glazed Chicken

4 chicken thighs (bone-in, skin-on)

1 cup pitted cherries (fresh or frozen)

1/2 cup chicken broth

1/4 cup balsamic vinegar

2 tablespoons brown sugar

2 cloves garlic (minced)

1 tablespoon soy sauce

1 teaspoon mustard (Dijon preferred)

1 teaspoon fresh thyme (or 1/2 teaspoon dried)

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon cornstarch (optional, for thickening)

Fresh thyme sprigs for garnish (optional)

Instructions
 

Prepare the Chicken:

    - Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.

      Sear the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Sear for about 5-7 minutes or until the skin is golden brown. Flip and sear the other side for another 3-4 minutes. Remove the chicken from the skillet and set aside.

          Make the Cherry Glaze:

            - In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the cherries and cook for 2-3 minutes until they start to soften.

              - Pour in the chicken broth, balsamic vinegar, brown sugar, soy sauce, mustard, and thyme. Bring to a simmer and cook for about 5 minutes, allowing the flavors to meld.

                Combine Chicken and Sauce:

                  - Return the chicken thighs to the skillet, skin-side up. Spoon some of the cherry mixture over the thighs. Cover the skillet and reduce the heat to medium-low. Simmer for about 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                    Thicken the Sauce (Optional):

                      - If you prefer a thicker sauce, mix the cornstarch with a tablespoon of cold water to create a slurry. Stir this into the skillet with the cherry glaze in the last 5 minutes of cooking until thickened.

                        Serve:
