Cheesy Zucchini Casserole

4 medium zucchinis, sliced into thin rounds

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups shredded cheddar cheese (divided)

1 cup ricotta cheese

2 large eggs

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably whole wheat)

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté the Onion and Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat.

      Prepare the Zucchini: In a large bowl, combine the sliced zucchinis, sautéed onion and garlic mixture, Italian seasoning, salt, and black pepper. Gently toss to coat all the zucchini slices.

        Mix the Cheese Filling: In a separate bowl, mix together ricotta cheese, 1 cup of shredded cheddar cheese, and eggs. Stir until smooth and well combined.

          Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the zucchini mixture evenly on the bottom. Pour half of the ricotta cheese mixture over the zucchini and spread it out evenly. Repeat the layers with the remaining zucchini and ricotta mixture.

            Top with Cheese and Breadcrumbs: Once you have your layers constructed, sprinkle the remaining cheddar cheese over the top. Then evenly distribute Parmesan cheese followed by an even layer of breadcrumbs.

              Bake the Casserole: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and crispy, and the casserole is bubbling around the edges.

                Serve: Let the casserole cool for about 5-10 minutes before serving. Garnish with fresh basil if desired. Enjoy this cheesy, comforting dish warm!
