Cheesy Taco Potato Stacks

4 large russet potatoes

1 lb ground beef (or turkey)

1 packet taco seasoning

1 cup cooked black beans (canned, rinsed)

1 ½ cups shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1 cup sour cream

½ cup sliced black olives

¼ cup green onions, chopped

Olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Preheat Oven: Preheat your oven to 425°F (220°C).

    Prepare Potatoes: Wash and scrub the potatoes thoroughly. Slice them into 1/4-inch thick rounds. Place the rounds in a bowl and drizzle with olive oil, then season with salt and pepper. Toss to coat evenly.

      Bake Potatoes: Arrange the potato slices in a single layer on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until they are golden and crispy.

        Cook the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat if needed. Stir in the taco seasoning along with ½ cup of water; simmer for about 5 minutes until thickened. Mix in the black beans and cook for an additional 2 minutes.

          Layer the Stacks: In a baking dish, begin layering your taco stacks. Start with a potato round, then add a spoonful of the beef and bean mixture, followed by a sprinkle of cheese. Repeat this process until you have 3-4 layers of potatoes, ending with a generous amount of cheese on top for a glorious cheesy finish.

            Melt the Cheese: Place the layered potato stacks back into the oven and bake for an additional 10 minutes, or until the cheese is bubbly and melted.
