1 lb Italian sausage (bulk or casings removed)

1 medium onion, diced

3 cloves garlic, minced

3 cups low-sodium chicken broth

1 can (14 oz) diced tomatoes (with juices)

1 cup heavy cream

1 package (9 oz) fresh or frozen cheese tortellini

2 cups fresh spinach (packed)

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh parsley or basil, chopped (for garnish)

Instructions
 

Cook the Sausage: In a large pot or Dutch oven, cook the Italian sausage over medium heat until browned and crumbled, about 5-7 minutes. Use a wooden spoon to break it into smaller pieces as it cooks. Drain excess grease if necessary.

    Sauté the Aromatics: Add the diced onion to the pot and sauté for about 3-4 minutes, until softened. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

      Add Broth & Tomatoes: Pour in the chicken broth and add the can of diced tomatoes (with their juices). Stir to combine and bring the mixture to a simmer.

        Creamy Addition: Lower the heat and stir in the heavy cream. Let it simmer gently on low for about 5 minutes, allowing the flavors to meld together.

          Cook the Tortellini: Add the tortellini to the soup and cook according to package instructions (usually about 3-5 minutes for fresh tortellini). Stir occasionally to prevent sticking.
