Cheesy Hatch Chili Pasta Pockets

2 cups all-purpose flour

2 large eggs

1/2 tsp salt

1 tbsp olive oil

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup roasted Hatch green chiles, chopped

1/2 cup grated Parmesan cheese

1/4 tsp black pepper

1/4 tsp garlic powder

1/4 tsp onion powder

2 cups marinara sauce (for serving)

Fresh basil or parsley (for garnish)

Prepare the Pasta Dough: In a large bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Mix together using a fork until it comes together. Knead the dough on a floured surface for about 8-10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, mozzarella cheese, roasted Hatch chiles, Parmesan cheese, black pepper, garlic powder, and onion powder. Mix until all ingredients are well incorporated.

      Roll Out the Dough: After resting, divide the dough into two halves. Roll each half out into thin sheets (about 1/16 of an inch thick) using a pasta machine or a rolling pin.

        Cut and Fill the Pasta: Using a knife or a pasta cutter, cut the dough into squares (around 3x3 inches). Place about a tablespoon of the cheese and chile filling in the center of each square. Moisten the edges with a little water, fold over to create a triangle, and press the edges to seal tightly.
