Cheesy Ground Turkey Enchilada Bake

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) enchilada sauce (red or green based on preference)

1 cup corn (fresh or frozen)

1 cup bell peppers, diced (any color)

2 cups Mexican blend cheese, shredded

8 corn tortillas

1 tsp cumin

1 tsp chili powder

½ tsp salt

½ tsp black pepper

Fresh cilantro, chopped (for garnish)

Sour cream (for serving, optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Turkey Mixture: In a large skillet over medium heat, add a splash of olive oil. Once hot, add the diced onion and sauté for about 3 minutes until translucent. Add minced garlic and cook for an additional 1 minute until fragrant.

      Add Turkey & Spices: Add the ground turkey to the skillet. Break it up with a spatula and cook until browned, about 5-7 minutes. Stir in cumin, chili powder, salt, and black pepper.

        Combine Ingredients: Once the turkey is fully cooked, stir in black beans, corn, bell peppers, and half of the enchilada sauce. Mix well until everything is evenly combined and heated through (about 2-3 minutes).

          Assemble the Bake: In a 9x13 inch baking dish, spread a thin layer of enchilada sauce on the bottom. Layer 4 corn tortillas, overlapping them slightly to cover the base. Spread half of the turkey mixture over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat the layers with the remaining tortillas, turkey mixture, and top with the remaining enchilada sauce and cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Serve: Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh cilantro and serve with a dollop of sour cream if desired.
