1 cup all-purpose flour

1/2 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1 small red bell pepper, finely chopped

2 green onions, sliced

1 large egg

1 teaspoon chili powder

1/2 teaspoon ground cumin

Prep the Zucchini: In a large bowl, combine grated zucchini and salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel or paper towels to remove as much moisture as possible.
