Cheesy Chili Bliss Fries

4 medium russet potatoes

2 cups shredded cheddar cheese

1 cup chili (beef or vegetarian)

1/2 cup sour cream

1/2 cup sliced green onions

1/4 cup sliced black olives (optional)

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Cooking oil (for frying)

Prepare the Potatoes: Wash and peel the russet potatoes. Cut them into evenly spaced wedges or traditional fry shapes. Soak the potatoes in cold water for at least 30 minutes to remove excess starch, which helps in achieving extra crispiness.

    Preheat the Oil: In a deep pot or fryer, heat oil to 350°F (175°C). Make sure there's enough oil to submerge the fries when frying.

      Fry the Potatoes: Drain and pat the potatoes dry. Fry the potato pieces in batches until golden brown and crispy, about 5 to 7 minutes per batch. Remove them using a slotted spoon and drain on paper towels. Season with salt and pepper while they’re hot.

        Layer the Chili: In a large baking dish or oven-safe platter, layer the crispy fries. Pour the warm chili evenly over the top.

          Add Cheese: Sprinkle the shredded cheddar cheese generously over the chili-covered fries, ensuring even coverage.

            Melt the Cheese: Place the baking dish in a preheated oven at 400°F (200°C) for about 5-8 minutes, or until the cheese is melted and bubbling.
