1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen or canned)

2 cups enchilada sauce (homemade or store-bought)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Fresh cilantro, for garnish

Avocado slices, for serving (optional)

Tortilla chips, for serving (optional)

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, season with salt and pepper, and cook for about 5-7 minutes until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Return the cooked chicken to the skillet. Stir in the black beans, corn, enchilada sauce, chili powder, cumin, and smoked paprika. Mix well to combine all ingredients and let simmer for about 5 minutes to meld flavors.
