2 cups mashed potatoes (prepared and cooled)

1 cup steamed broccoli florets, finely chopped

1 cup shredded sharp cheddar cheese

1 large egg

1/2 cup all-purpose flour (plus extra for dusting)

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (optional)

1/3 cup breadcrumbs (for coating)

Olive oil or butter, for frying

Prepare the Mixture: In a large mixing bowl, combine the cooled mashed potatoes, chopped broccoli, shredded cheddar cheese, egg, flour, garlic powder, onion powder, salt, and pepper. Add chopped parsley if using. Mix well until all the ingredients are evenly incorporated.

    Form the Patties: Dust your hands with flour to avoid sticking. Take a handful of the mixture and form it into a patty, about 2 inches in diameter and 1/2 inch thick. Repeat with the remaining mixture.

      Coat the Patties: Place the breadcrumbs in a shallow dish. Gently press each potato cake into the breadcrumbs to coat both sides evenly.

        Heat the Pan: In a large skillet, heat a couple of tablespoons of olive oil or butter over medium heat. Allow the oil to get hot but not smoking.
