Cheesy Baked Zucchini Boats

4 medium zucchinis

1 cup cherry tomatoes, diced

1 cup corn (fresh or canned)

1 cup cooked quinoa

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the center to create boats. Reserve the scooped zucchini flesh.

      Sauté the Filling: In a skillet over medium heat, add olive oil. Once hot, add the reserved zucchini flesh and diced cherry tomatoes. Sauté for about 3-4 minutes until softened.

        Mix the Filling: Remove from heat and add corn, cooked quinoa, garlic powder, onion powder, Italian herbs, salt, and pepper. Stir in half of the mozzarella and all of the Parmesan cheese.

          Stuff the Zucchini Boats: Place the zucchini halves in a baking dish. Generously fill each boat with the prepared filling mixture.

            Top with Cheese: Sprinkle the remaining mozzarella cheese on top of each filled zucchini boat.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Once baked, remove from the oven and let cool slightly. Garnish with fresh basil leaves, if desired, and serve warm.
