For the Chocolate Crust:

1 and ½ cups chocolate cookie crumbs (like Oreo)

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Cheesecake Filling:

24 oz (3 packages) cream cheese, softened to room temperature

1 cup granulated sugar

1 cup sour cream

1 teaspoon vanilla extract

4 large eggs, at room temperature

8 oz Godiva chocolate, melted and slightly cooled

½ cup heavy whipping cream

For the Ganache Topping:

8 oz Godiva chocolate, chopped

½ cup heavy cream

1 tablespoon unsalted butter

For Garnish:

Whipped cream

Chocolate shavings or cocoa powder

Instructions
 

Prepare the Chocolate Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine the chocolate cookie crumbs and granulated sugar. Stir in the melted butter until the mixture resembles wet sand.

        - Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake in the preheated oven for 10 minutes. Remove and let cool while preparing the filling.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy, about 2-3 minutes.

              - Gradually add the granulated sugar and mix until well combined.

                - Stir in the sour cream and vanilla extract until smooth.

                  - Add the eggs one at a time, mixing on low speed after each addition until just incorporated. Do not overmix.

                    - Pour in the melted Godiva chocolate and mix until the chocolate is fully combined and the mixture is smooth.

                      - Gently fold in the heavy whipping cream until the filling is light and fluffy.

                        Bake the Cheesecake:

                          - Pour the cheesecake filling over the cooled chocolate crust in the springform pan.
