Ingredients

4 boneless, skinless chicken breasts

1 cup shredded sharp cheddar cheese

1 cup marinara sauce (homemade or store-bought)

1 cup all-purpose flour

2 large eggs, beaten

1 cup Italian-style breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Olive oil for frying

Fresh basil leaves for garnish (optional)

Extra marinara sauce for serving

Instructions

Prepare the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap or parchment paper, and pound them to an even thickness, about 1/2 inch thick.

Stuff the Chicken: On each chicken breast, place about 1/4 cup of shredded cheddar cheese in the center. Roll the chicken tightly around the cheese, tucking in the ends to prevent the cheese from escaping.

Dredging Setup: Set up three bowls: one with flour seasoned with salt and pepper, another with the beaten eggs, and a third with breadcrumbs mixed with garlic powder, onion powder, and dried Italian herbs.

Coat the Roll-Ups: Carefully dip each chicken roll-up into the flour, shaking off excess, then into the beaten eggs, and finally coat thoroughly with the breadcrumb mixture.

Fry the Chicken: In a large skillet, heat about 1/4 inch of olive oil over medium-high heat. Once hot, add the chicken roll-ups, cooking for about 3-4 minutes on each side until golden brown. You may need to do this in batches to avoid overcrowding the pan.

Bake the Chicken: Once browned, transfer the roll-ups to a baking dish. Pour marinara sauce over the chicken rolls, covering them completely. Sprinkle any remaining cheddar cheese on top.

Bake to Perfection: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

Garnish and Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh basil leaves if desired. Serve hot with additional marinara sauce on the side for dipping.
