Ingredients

1 cup yellow cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

2 large eggs

1/4 cup vegetable oil (or melted butter)

1 cup shredded sharp cheddar cheese

1/2 cup diced fresh jalapeños (seeds removed for less heat)

1/4 cup honey (optional for a touch of sweetness)

Fresh chives or green onions, chopped (for garnish)

Instructions

Preheat the Waffle Iron: Start by preheating your waffle iron according to the manufacturer’s instructions. Lightly grease it with cooking spray or a brush of oil.

Mix Dry Ingredients: In a large mixing bowl, combine the yellow cornmeal, all-purpose flour, baking powder, baking soda, and salt. Whisk together until evenly mixed.

Combine Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and vegetable oil (or melted butter). If you prefer a sweeter cornbread, add the honey here.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix just until combined. Be careful not to overmix; a few lumps are fine.

Add Cheese and Jalapeños: Gently fold in the shredded cheddar cheese and diced jalapeños into the batter until evenly distributed.

Cook Waffles: Pour the appropriate amount of batter onto the preheated waffle iron (generally about 1/2 to 3/4 cup, depending on your waffle iron size). Close the lid and cook until golden brown and crisp, usually about 5-7 minutes. Repeat with the remaining batter.

Serve: Carefully remove the waffles from the waffle iron and keep warm in a preheated oven at 200°F (93°C) while you finish cooking the rest. Serve warm, garnished with fresh chives or green onions. These waffles pair wonderfully with butter, maple syrup, or even a dollop of sour cream for an added twist.
