8 oz penne pasta

1 lb boneless, skinless chicken breasts, cubed

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (14 oz) diced tomatoes with green chilies

1 can (15 oz) kidney beans, rinsed and drained

1 cup chicken broth

2 teaspoons chili powder

1 teaspoon cumin

Salt and pepper to taste

1 ½ cups shredded sharp cheddar cheese

¼ cup fresh cilantro, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and season with salt and pepper. Cook until golden brown on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the diced onion, garlic, and bell pepper. Sauté for about 3-4 minutes until the vegetables are softened and fragrant.

        Combine Ingredients: Add the cooked chicken back into the skillet along with the diced tomatoes (with their juices), kidney beans, chicken broth, chili powder, and cumin. Stir well to combine. Bring the mixture to a simmer.

          Add Pasta: Once the mixture is simmering, add the cooked penne pasta to the skillet. Stir everything together and let it cook for an additional 2-3 minutes to allow the flavors to meld.

            Cheese Time: Reduce the heat to low, sprinkle the shredded cheddar cheese over the pasta mixture, and cover the skillet. Let it cook for 2-3 minutes until the cheese is melted and bubbly.
