2 cups cooked chicken breast, shredded or diced

1 cup sharp cheddar cheese, grated

1 large crisp apple (such as Granny Smith or Honeycrisp), cored and diced

1/2 cup celery, finely chopped

1/2 cup red grapes, halved

1/4 cup red onion, finely diced

1/2 cup Greek yogurt (or mayonnaise, if preferred)

1 tablespoon Dijon mustard

1 tablespoon honey

Salt and pepper, to taste

1 tablespoon fresh lemon juice

1/4 cup walnuts or pecans, roughly chopped (optional)

Lettuce leaves, for serving (optional)

Instructions
 

In a large mixing bowl, combine the shredded chicken, cheddar cheese, diced apple, celery, halved grapes, and red onion. Toss gently to combine.

    In a separate small bowl, whisk together the Greek yogurt (or mayonnaise), Dijon mustard, honey, lemon juice, salt, and pepper until smooth and well blended.
