Charred Veggie Skewers with Balsamic Glaze

Ingredients
  

1 medium zucchini, sliced into thick rounds

1 red bell pepper, cut into large chunks

1 yellow bell pepper, cut into large chunks

1 red onion, cut into wedges

8 ounces mushrooms, cleaned and stems trimmed

1 cup cherry tomatoes

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1 cup balsamic vinegar

1 tablespoon honey or maple syrup

Fresh basil leaves, for garnish

Instructions
 

Prep the Veggies: In a large bowl, combine zucchini, red and yellow bell peppers, red onion, mushrooms, and cherry tomatoes.

    Season: Drizzle with olive oil, and sprinkle garlic powder, Italian seasoning, salt, and pepper over the veggies. Toss to coat evenly.

      Soak Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning.

        Assemble Skewers: Thread the seasoned vegetables onto the skewers, alternating colors for an appealing look.

          Prepare Balsamic Glaze: In a small saucepan, combine balsamic vinegar and honey (or maple syrup). Bring to a boil over medium heat and then reduce to a simmer. Let it cook until the mixture thickens, about 10-15 minutes, stirring occasionally. Remove from heat and let cool slightly.

            Preheat Grill: Preheat your grill to medium-high heat.

              Grill Skewers: Place the veggie skewers on the grill. Cook for 10-12 minutes, turning occasionally, until the vegetables are tender and have grill marks.

                Drizzle Glaze: Once the skewers are done, remove them from the grill. Drizzle with the balsamic glaze generously.

                  Serve: Garnish with fresh basil leaves and serve immediately while warm.
