2 large chicken breasts, diced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

1 cup sliced salami

1 cup prosciutto, torn into pieces

1 cup mixed olives (green and black), pitted

1 cup cherry tomatoes, halved

1/2 cup sharp cheddar cheese, shredded

1/2 cup goat cheese, crumbled

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh basil, chiffonade

1 tablespoon balsamic reduction (for drizzling)

Preparation of Chicken: In a large skillet over medium heat, add the olive oil. Season the diced chicken with salt, black pepper, and smoked paprika. Add the chicken to the skillet and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through, stirring occasionally.
