2 cups all-purpose flour

1/2 cup rolled oats

1 tablespoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup honey or maple syrup

3/4 cup whole milk (or dairy-free alternative)

1/2 cup Greek yogurt (plain or flavored)

2 large eggs

1/2 cup diced cooked bacon

1/2 cup diced salami or pepperoni

1/2 cup shredded cheddar cheese

1/4 cup chopped fresh herbs (chives, parsley, or rosemary)

Optional: 1/4 cup diced olives or pickles for a tangy kick

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, rolled oats, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, mix the honey (or maple syrup), milk, Greek yogurt, and eggs until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.

          Add Charcuterie Ingredients: Add the diced bacon, salami (or pepperoni), shredded cheese, and fresh herbs to the batter. If you're using olives or pickles, fold them in as well. Gently mix until evenly distributed.

            Fill Muffin Tin: Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean and the tops are golden brown.

                Cool: Once baked, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
