Carrot Ginger Soup

1 lb (450g) organic carrots, peeled and chopped

1 medium onion, diced

2 cloves garlic, minced

2 tablespoons fresh ginger, grated

4 cups vegetable broth (or chicken broth for non-vegetarians)

1 cup coconut milk (canned)

2 tablespoons olive oil

1 teaspoon cumin powder

1/2 teaspoon ground coriander

Salt and pepper to taste

Fresh cilantro or parsley for garnish

Optional: A squeeze of lime juice for brightness

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.

    Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

      Cooking Carrots: Add the chopped carrots to the pot along with the cumin and coriander. Stir to combine and cook for about 3-4 minutes.

        Add Broth: Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for 20-25 minutes, or until the carrots are tender.

          Blend the Soup: Remove the pot from heat. Using an immersion blender, puree the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender.

            Finish with Coconut Milk: Once the soup is smooth, stir in the coconut milk. Bring it back to a gentle simmer for another 5 minutes. Season with salt, pepper, and lime juice to taste if desired.

              Serve: Ladle the soup into bowls and garnish with fresh cilantro or parsley. Drizzle with a bit more coconut milk for presentation, if you like.
