1/2 cup rolled oats

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup grated carrots (about 2 medium carrots)

1/2 cup crushed pineapple, drained

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or currants (optional)

Cream cheese frosting (for drizzle or spread, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix the Dry Ingredients: In a medium bowl, whisk together the flour, rolled oats, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

      Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and well combined. This should take about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract, mixing until fully incorporated and smooth.

          Incorporate the Carrots and Pineapple: Gently fold in the grated carrots and drained crushed pineapple until evenly distributed in the batter.

            Combine Dry and Wet Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be cautious not to overwork the dough. If desired, add chopped nuts and raisins/currants and fold them in gently.

              Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
