12 oz (340 g) spaghetti or fettuccine

3 large onions, thinly sliced

4 cloves garlic, minced

1/4 cup (60 ml) extra virgin olive oil

1/2 cup (120 ml) chicken or vegetable broth

1/4 cup (60 ml) balsamic vinegar

1 tsp sugar (optional, to enhance caramelization)

Salt, to taste

Freshly cracked black pepper, to taste

1/2 cup (50 g) grated Parmesan cheese (optional)

1-2 tsp chilli oil (adjust to taste)

Fresh parsley, chopped, for garnish

Zest of 1 lemon (optional)

Cook the Pasta: Begin by boiling a large pot of salted water. Cook the spaghetti or fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.

    Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions, a pinch of salt, and the optional sugar. Stir frequently, cooking for about 20-25 minutes or until the onions are deeply golden and caramelized. If they start to stick, add a splash of broth or water.

      Add Garlic: Once the onions are caramelized, lower the heat to medium-low and add the minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
