For the Apple Filling:

3 large apples (Granny Smith or Honeycrisp), peeled, coried, and diced

1 tablespoon lemon juice

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon all-purpose flour

1/2 teaspoon vanilla extract

For the Crust and Crumble Topping:

1 1/2 cups all-purpose flour

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup caramel sauce (store-bought or homemade)

For the Caramel Drizzle:

1/2 cup caramel sauce (for drizzling on top)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch (or 9x9-inch) baking dish with parchment paper, allowing some overhang for easy removal.

    Prepare the Apple Filling: In a large mixing bowl, combine the diced apples, lemon juice, granulated sugar, cinnamon, flour, and vanilla extract. Toss well to coat the apples evenly and set aside.

      Make the Crust and Crumble Topping: In another mixing bowl, combine the flour, rolled oats, brown sugar, baking soda, and salt. Stir well to combine. Then, pour in the melted butter and mix until it resembles a crumbly dough.

        Assemble the Bars: Take two-thirds of the oat mixture and press it into the bottom of the prepared baking dish to form a firm crust. Bake in the preheated oven for 10 minutes until just set.

          Add the Apple Filling: Remove the crust from the oven and evenly spread the apple filling over it. Drizzle the 1/4 cup of caramel sauce on top of the apples.
