4 medium zucchini (for zoodles)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, torn

2 tablespoons balsamic glaze

2 tablespoons extra virgin olive oil

Salt and pepper, to taste

Optional: 1 medium avocado, diced

Make the Zoodles: Using a spiralizer, create zoodles from the zucchini. If you don’t have a spiralizer, you can use a vegetable peeler to create long ribbons.

    Prepare the Vegetables: In a large mixing bowl, combine the zoodles, halved cherry tomatoes, mozzarella balls, and torn basil leaves.

      Dress the Salad: Drizzle the extra virgin olive oil and balsamic glaze over the salad. Gently toss to ensure everything is well coated.

        Season: Add salt and pepper to taste, adjusting as needed to suit your preference.

          Optional Avocado: If using, gently fold in the diced avocado to the salad.
