2 tablespoons olive oil

1 pound smoked sausage (such as kielbasa or andouille), sliced into rounds

1 large onion, diced

3 cloves garlic, minced

1 teaspoon paprika (sweet or smoked)

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional, for heat)

1 cup chicken broth

2 medium carrots, sliced thinly

1 bay leaf

Salt to taste

Fresh parsley, chopped (for garnish)

Sauté the sausage: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned on both sides, about 5 minutes. Remove the sausage from the skillet and set aside.
