1 head of butter lettuce (or iceberg lettuce), leaves separated

1 cup shredded carrots

½ cup celery sticks, sliced into thin strips

½ cup crumbled blue cheese (optional)

      Prepare the Lettuce Wraps: While the turkey is cooking, rinse and dry the lettuce leaves carefully to keep them crisp. Make sure they are whole and sturdy enough to hold the filling.
