2 cups cooked shredded chicken

1/2 cup Buffalo sauce (adjust to taste)

8 sheets of rice paper

1 cup shredded lettuce

1/2 cup shredded carrots

1/2 cup cucumber, julienned

1/4 cup red bell pepper, thinly sliced

1/4 cup green onions, chopped

1/4 cup crumbled feta or blue cheese (optional)

Fresh cilantro or parsley leaves (for garnish)

Dipping sauce (ranch or blue cheese dressing)

Prepare the Chicken: In a mixing bowl, combine the shredded chicken with Buffalo sauce. Adjust the amount of sauce according to your spice preference. Mix well until the chicken is evenly coated and set aside.

    Soften Rice Paper: Fill a wide shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes pliable but not too soft. Lay it flat on a clean, damp surface or cutting board.

      Layer the Fillings: Place a small handful of shredded lettuce at the lower third of the rice paper sheet, followed by a few strips of cucumber, shredded carrots, and red bell pepper. Add a portion of the Buffalo chicken mixture and sprinkle some green onions and cheese (if using) on top.
