1 cup all-purpose flour

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1 cup buttermilk (or milk + 1 tablespoon vinegar)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

Extra butter or oil for cooking

Optional: Maple syrup, fresh fruit, or whipped cream for serving

Instructions
 

Prep the Dry Ingredients: In a medium mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined. Set aside.

    Mix the Wet Ingredients: In another bowl, in a separate bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Mix until fully blended.

      Combine: Pour the wet ingredients into the dry mixture, and gently stir until just combined. Be careful not to overmix; a few lumps are perfectly fine!

        Heat the Pan: Heat a non-stick skillet or griddle over medium-low heat. Lightly grease it with butter or oil. You want a hot surface, but not so hot that the pancakes burn.
