1 can (14.5 oz) diced tomatoes (with juices)

1 can (15 oz) kidney beans, drained and rinsed

1 teaspoon salt (adjust to taste)

4 large eggs

Fresh cilantro, chopped (for garnish)

Avocado slices (for topping)

Optional: shredded cheese and hot sauce (for serving)

Prepare the Base: Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
