4 large flour tortillas

6 large eggs

½ cup milk

1 cup shredded Monterey Jack cheese

1 cup diced bell peppers (red and green)

½ cup diced red onion

1 cup cooked chorizo (optional for a spicy kick)

½ cup salsa (plus extra for serving)

1 ripe avocado, diced

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Olive oil or butter (for cooking)

Instructions
 

Prepare the fillings: In a large skillet, heat a drizzle of olive oil or butter over medium heat. Add the diced red onion and bell peppers, sautéing until tender, about 5-7 minutes. If using, add the cooked chorizo and heat through for an additional 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.

    Scramble the eggs: In a medium bowl, whisk together the eggs and milk until well combined. In the same skillet, pour the egg mixture and cook over medium heat, stirring gently until the eggs are just set but still creamy. Remove from heat.

      Combine fillings: In a large bowl, combine the scrambled eggs, sautéed vegetables (and chorizo if using), and shredded Monterey Jack cheese. Stir gently to combine, allowing the cheese to melt slightly.

        Assemble the burritos: Lay a flour tortilla flat on a clean surface. Spoon a generous portion of the egg mixture onto the center of the tortilla. Add a spoonful of salsa and some diced avocado on top.

          Roll the burritos: Fold in the sides of the tortilla, then roll up from the bottom to enclose the filling securely. Repeat with the remaining tortillas and filling.

            Toast the burritos (optional): In a clean skillet, heat a little olive oil or butter over medium heat. Place the burritos seam side down and cook for about 2-3 minutes per side until golden brown and crispy.
